From Forest to Glass: Amazonian Ingredients Taking New Forms at the Bar

Before reaching the glass, every Amazonian ingredient travels a long way. It grows in the forest, is gathered by people who know its cycles, and carries uses passed down through generations.

When it reaches the bar, it doesn't lose that story. It simply takes on a new form.

Fruits that define flavor

Cupuaçu, a close relative of cacao, has a tart and fragrant pulp that balances sweetness and freshness. Taperebá, also known as cajá, brings a bright acidity that wakes up the palate. Bacuri, with its white pulp and intense aroma, is one of the region's most distinctive fruits.

Then there is açaí, which in the Amazon is far more than a dessert. In northern Brazil, it is an everyday food, eaten unsweetened alongside meals. A reminder that every ingredient has a place in the lives of those who live the territory.

Seeds and roots that perfume

Cumaru is a seed with a sweet aroma reminiscent of vanilla and almond. Priprioca, an aromatic root long used in traditional preparations and now valued in perfumery, adds earthy and woody notes. Brazil nuts bring texture and richness.

In mixology, these ingredients appear in syrups, infusions, and bitters, adding depth to drinks without hiding where they come from.

The leaf that makes your mouth tingle

Few ingredients surprise like jambu. Its leaves and flowers contain a compound called spilanthol, which creates a gentle tingling and numbing sensation. Common in traditional cooking from Pará and Amazonas, it has found its way into contemporary bars precisely because it turns drinking into a sensory experience.

Tucupi, a golden broth extracted from bitter cassava and slowly cooked, is another ingredient rooted in ancestral technique that is starting to appear in new interpretations.

Knowledge that comes before technique

Much of what we know about these ingredients comes from Indigenous peoples and traditional communities of the Amazon. When to harvest, how to prepare, what pairs with what. Contemporary mixology is a recent reading of something that has existed for a very long time.

To value these flavors is also to recognize those who kept them and passed them on.
